I've had good experiences with the Software Freedom Conservancy, which incorporates free and open source projects as part of itself (basically you sign over the copyright ownership and fill out various forms): they hold your assets and provide various legal and practical services. If they don't think you're a good fit, they'll point you to another organization that is.
